Cilantro-Lime Sauce
Ingredients
One bunch of Cilantro (around 100g)
2 tbsp. Lime Juice
One cup of full fat Greek Yogurt (225g)
3 stalks green onion, chopped
4 cloves of Garlic
3 pinches of Salt (1/4 tsp.)
Black Pepper to taste
Method
Wash cilantro and roughly chop.
Blanch cilantro
Bring 2 quarts of water to a rolling boil and prep a separate bowl with ice and water. Drop chopped cilantro into the water and stir for one minute. Drain and place cilantro into the ice/water. Strain and blot dry with a cloth.
Add Cilantro and remaining ingredients into a blender. Blend on high for 1 minute
Pour into container and store in fridge
Use within 2-3 weeks
Freeze sauce if you would like to keep it for longer.
Yields about 12-14 oz. of sauce
