Cilantro-Lime Sauce

Ingredients

  • One bunch of Cilantro (around 100g)

  • 2 tbsp. Lime Juice

  • One cup of full fat Greek Yogurt (225g)

  • 3 stalks green onion, chopped

  • 4 cloves of Garlic

  • 3 pinches of Salt (1/4 tsp.)

  • Black Pepper to taste

Method

  • Wash cilantro and roughly chop.

  • Blanch cilantro

    • Bring 2 quarts of water to a rolling boil and prep a separate bowl with ice and water. Drop chopped cilantro into the water and stir for one minute. Drain and place cilantro into the ice/water. Strain and blot dry with a cloth.

  • Add Cilantro and remaining ingredients into a blender. Blend on high for 1 minute

  • Pour into container and store in fridge

  • Use within 2-3 weeks

  • Freeze sauce if you would like to keep it for longer.

  • Yields about 12-14 oz. of sauce
